Sprouting broccoli produces lots of slender, elegant stems, with small florets. Stems are extra-sweet and tender, and don't need to be peeled. This chef's favourite, previously only found in supermarkets, is actually a clever hybrid of standard broccoli and Gai Lan (Chinese broccoli).
