Horseradish packs a bite. It is most widely used as a condiment, both by itself and as an ingredient in sauces and dressings. The hot and spicy roots of horseradish make this plant a classic accompaniment to roast beef. This hardy perennial plant is easy to grow and cold and drought tolerant. Choose a sunny or light shade spot in your garden with well drained soil. Water regularly. Once the shoots appear, reduce them in number of two to three to encourage the root growth. Harvest by digging up all roots carefully as the smallest piece will regrow.
